cake…without eggs…and tasty…here goes:
In an attempt to make a non chocolate cake I opened up my Betty Crocker cookbook
and looked for a recipe with few eggs
The fewer eggs you have to substitute for the better the recipe turns out.
and this is what I came up with:(the following is a picture I found online and this is what the cake looked like before my family devoured it!)
Betty Crocker’s Dinette Cake(with my substitutions in green 🙂 )
1 1/2 c. cake flour or 1 1/4 c. all-purpose flour
1 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
3/4 c. milk(I use 3/4 cup vanilla soy milk and 1tsp lemon juice)
1/3 c. shortening(I use light flavored olive oil)
1 egg(I use 1/4 cup of soy sour cream)
1 tsp. vanilla(I use 2 tsp homemade vanilla vodka)
Heat oven to 350 degrees. Grease and flour square pan, 8 x 8 x 2 inches or 9 x 9 x 2 inches. Measure all ingredients into large mixer bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes high speed scraping bowl occasionally. Pour into pan.
Bake 35 to 40 minutes or until wooden pick inserted in center comes out clean. Cool on cooling rack. If desired frost cake with your favorite icing or make it into a strawberry shortcake.

so today doubled the recipe and its sweetening up the house with its aroma as I type!
